A simple but delicious cake recipe:

(*) e.g. currants, raspberries, blueberries, strawberries.

For the dough, mix butter and a pinch of salt until smooth. Add egg yolks and cornstarch alternately. Whip the egg whites until stiff, adding sugar and vanilla sugar at the end. Stir 1/3 of the beaten egg whites into the batter, folding in the remaining two-thirds loosely.

Preheat the oven to 200 degrees (top and bottom heat 225 degrees). Line the bottom of a cake springform pan (26 cm ø) with parchment paper. Pour five tablespoons of the batter into the pan, spread smoothly and bake for about five to ten minutes until the surface is golden brown. The baking time varies from stove to stove, so be careful not to let the dough get too dark.

Then, on top of the hot baked dough, mold three to four tablespoons of raw dough and smooth it. Bake this layer until it is golden brown and continue until all the dough is used up. This will take about just under an hour.

After cooling, remove the base from the pan, place it on a flat serving plate and stretch a flexible springform rim around it.

For the yogurt mixture, soak the gelatin in cold water according to package directions. In the meantime, whisk the yogurt with juice of one lemon and powdered sugar until smooth. Squeeze the gelatin, let it melt at a low temperature and add it to the yogurt form while stirring. Leave the yogurt mixture to cool and add the whipped cream.
