Instructions:

For Tanja’s birthday bread, first prepare the light dough: Mix all ingredients and knead until an even dough is formed. Cover the dough and let it rise in a warm place for 2 hours.

Remove the dough from the bowl, knead, roll out and line a loaf pan with it.

For the dark dough, mix all the ingredients and pour into the hollow created in the light dough. Fold the light dough over it and let the bread rise covered for 1 ½ hours.

Preheat the oven to 220 °C. Bake at 220 °C top/bottom heat for 5 minutes. Then turn down to 180 °C and finish baking Tanja’s birthday bread for 40 minutes.
