Instructions:

For the sweet couscous, first prepare the couscous according to the package instructions. Cut the butter into small pieces and mix into the couscous with the fine sugar. Loosen the semolina with a fork and crush any lumps. Pile the couscous into a cone on a round flat plate and dust the top with powdered sugar. Then, from the top down, alternately dust a strip of cinnamon and a strip of confectioners’ sugar, creating a star-shaped pattern. Serve the sweet couscous and pass around bowls of honey, powdered sugar and cinnamon, as well as other fruits and nuts, so that everyone can help themselves.

Preparation Tip:

For decoration, place muscatel raisins or Smyrna raisins and almonds or dates and walnut kernels roasted to golden brown in a little oil around the base of the cone or between the sugar and cinnamon strips. (You can also mix the coarsely chopped nuts and small raisins into the couscous before piling it into a cone). Another option is to scatter sweet grapes and bright red pomegranate seeds over the couscous.
