For the spinach feta packets with thyme potatoes, sauté chopped onion and garlic in a pan until translucent. Add the finely chopped spinach.

Deglaze with very little water so that the spinach collapses. Season with chili and some pepper, no salt! Roast a little more until the liquid has evaporated, stir in the feta, let cool.

Spread 1 strudel sheet halfway with melted butter and fold together, repeat and fold again. This will make four layers. Carefully place in buttered muffin tin, fill with half the spinach-feta mixture.

Close carefully, do the same with the 2nd strudel sheet. Brush the half-cooked potatoes with butter or a little olive oil, salt and sprinkle with thyme, place each in a part of the muffin tin.

Bake at 180 degrees in the preheated oven for about 20-25 minutes.
