Instructions:

Sauté the onion in hot olive oil, add the cleaned shrimp (without the shells) and fry briefly. Deglaze with brandy, pour in cream and boil down for about 10 minutes. Pour into a bowl and let cool. Then process the shrimp with mozzarella, tarragon, yolks and parmesan in a food processor to a smooth puree. Season to taste with lemon juice, salt and pepper. Process ravioli as described in the basic recipe and serve with the prepared shrimp sauce. For the shrimp sauce, cut the onion and vegetables into medium sized cubes and sauté in a little oil until very hot. Add shrimp shells, spices and tomato paste and fry vigorously. Deglaze with white wine, Noilly Prat and brandy and add water. Boil thoroughly until the sauce is reduced by about half. Pour in the cream and reduce again slightly. Pour through a sieve, mix with cold butter and season with salt and pepper.
