Instructions:

For the red wine sauce, first put some oil in a hot pan and add the onion. Let it roast without stirring until frying residue forms. Then stir briefly and continue to fry without stirring.

Add sugar, let it caramelize and roast until very dark. Deglaze with red wine. Add garlic and herbs. Let the red wine boil away completely.

Pour in stock. Bring to a boil and season with salt and pepper. Then let it boil down for 3-4 minutes.

Mix cornstarch with a little water and stir into the sauce. Continue to boil down and then empty the red wine sauce through a sieve.
