For the railwaymen, preheat the oven to 180 degrees. Cover 2 baking sheets with baking paper. Knead flour, butter, powdered sugar, egg, vanilla sugar and lemon zest into a smooth dough. Wrap dough in plastic wrap and refrigerate for about 1 hour.

Divide the dough in half. Roll out each half on a floured work surface to sheet size. Place on sheet pans and prick with a fork at short intervals. Bake dough in oven (middle rack), tray by tray, for about 8 minutes.

Spread 100 g apricot jam on one dough while it is still warm, place the remaining dough on top and spread 100 g raspberry jam on top. Cut dough pieces into 8 strips about 5 cm wide. Preheat the oven to the grill setting. Stir marzipan, sugar and egg white until smooth and fill into a pastry bag with a star-shaped nozzle.

Spread the marzipan in 3 strips (on the edges and in the middle) on the pastry strips and flame in the oven (middle rack) for about 30 seconds, remove and let cool. Drizzle the remaining jam separately in the spaces. Cut the strips into pieces. Store the railwaymen in a cookie tin.

Preparation Tip:

Roll out the dough for the railroaders right at the baking sheet, otherwise it will break easily when lifted.
