For the railwaymen, quickly knead the ingredients for the shortcrust pastry into a dough and leave to rest in a cool place for 1 hour. Roll out dough thinly and cut into strips about 5 cm wide.
For the nut mixture, beat nuts, sugar, cinnamon and egg whites in a water bath until stiff. Pipe the mixture onto the sides of each dough strip. Bake in the preheated oven at 160° for about 15 minutes.
After cooling, fill the spaces between the nut mass with warmed jam. Cut the bahns into strips about 2 cm wide.
