For the quesadillas, finely dice the onion and fry in a pan with a little oil until translucent. Add the minced meat and fry well. Do not forget salt and pepper.

Peel and dice the avocado and put it in a bowl with the tomatoes, also diced. Sprinkle with lemon juice and season with salt and pepper. Preheat the oven to 200 °C.

Place four burritos on the baking sheet and top each with mince, avocado/tomatoes, corn and cheese, then place another on top of each of the burritos. Let bake for 10-15 minutes.

Preparation Tip:

Put some cheese on top of the quesadillas, then you can see immediately when they are ready, namely when the cheese is well melted. Quesadillas can be cut into pieces like pizza and then eaten like finger food.
