A great cake recipe for any occasion:

Make and peel potatoes the day before. A day later grate and mix with flour and baking powder.

Then knead together heartily and quickly with fat, sugar, vanilla sugar and egg to form a firm dough, with the proviso that if necessary knead in a little more flour so that the dough is not sticky.

Dust a clean work surface with flour and roll out the dough into a large rectangle at least 30×40 cm (per strudel).

For the filling:

Peel the apples and cut them into fine slices. Mix with the raisins, sugar and cinnamon and spread evenly on the dough.

Roll up the rectangle, brush with melted butter and bake in a large gratin dish or on a baking tray at 200 °C for about half an hour.

Serve warm, perhaps with vanilla sauce or whipped cream.
