For the potato and pear soup, peel the potatoes, onion and pears. Core the pears and cut everything into small cubes.

Fry the ingredients in the sunflower oil – the potatoes should not get any color. Once the onions are translucent, add the soup (or water) and simmer gently until the potatoes are soft.

Puree with a hand blender. Add the whipped cream and simmer for another 5 minutes.

Puree the potato and pear soup again and season to taste with salt and pepper.

Serve the potato and pear soup with a dollop of whipped cream and crispy croutons.
