Instructions:

Stir all the ingredients for the filling.

Remove the skin from the pears, but leave the stem on the fruit. Cut the pears in half and cut out the core.

Shape some filling into the pear halves and put the two matching halves together again to form a whole fruit.

Roll out the puff pastry to a 40 cm rectangle. Cut strips 2 cm wide and 40 cm long and squares 8 x 8 cm (1 per pear).

Place one pear on each square of dough and cover the lower part of the fruit with it. Then, starting at the base of the stem, wrap the pear with the strip of dough in a spiral so that the fruit is completely wrapped. At the transition, stick well together with the bottom piece of dough.

Mix the egg yolks and brush the dough pears.

Meanwhile, bake the pears in the oven heated to 200 °C on the second rack from the bottom for about thirty minutes.

For the custard, bring the milk to the boil with the vanilla stalk cut open and the seeds scraped out.

Beat the egg yolks and sugar until creamy. Repeatedly bring the milk to a boil and form into the egg cream. Pour back into the frying pan and bring to a boil briefly while continuing to stir (but don’t do it!).

Cool.

Before serving, whip the cream until stiff and fold into the custard. Serve separately with the pears.
