Remove the peel from the oranges and cut the fruit fillets from the membranes with a kitchen knife. Collect the orange juice.

Mix the egg yolks and the sugar well and whisk in a hot water bath with the wine, Cointraeu and the collected orange juice until the mixture is creamy.
