For Scottish oatmeal cookies, mix oatmeal with salt in a bowl and press a well in the center of the flour.
Add the fat to the well, mix everything well and add as much water until a firm dough is formed.
Knead the dough well on a floured surface, then roll it out to the thickness of a finger.
Cut out large round pieces and divide them crosswise into four segments. Sprinkle with oatmeal. Bake on a hot griddle or heavy skillet, not turning until they bend up.
Scotch oat cookies hot with cottage cheese.
