For the mushroom pizza, dissolve yeast in water and knead into a dough with spelt flour, salt and oil. Leave to rise in a warm place with the lid closed for half an hour.

In the meantime, wash the vegetables, chop the leeks into rings and the mushrooms into slices. Cut out the green stalks from the tomatoes and cut them into slices.

Dust a baking tray with some spelt flour, roll out the dough and cover the baking tray with it.
