An Italian pasta salad ideal for summer parties:

Cook the pasta until al dente and let cool.

Meanwhile, cut the mozzarella and tomatoes into bite-sized pieces.

Blend the dressing well, it will be nice and creamy with a hand blender or in a stand mixer. Mix all the ingredients (except the arugula) in a large bowl and let sit for a while if necessary.

Before serving, season the Italian pasta salad again (the pasta needs quite a lot of salt), only at the end mix in the ruccola.
