Preheat the oven to 180 °C (convection oven).

Coat A4 sheets of aluminum foil with a little olive oil. Form the halibut fillets in the center. Season with salt and pepper. Remove the peel from the lemon, cut into fine slices and place on top of the halibut fillets.

Clean, seed and rinse the peppers. Clean and rinse the fennel bulb and cut both into tender strips. Season lightly with a tiny bit of salt and spread evenly over the fish. Drizzle with the remaining olive oil and fold the aluminum foil tightly over the fish, pinching the ends closed.

Place the fish packet on a tray and cook in the heated oven for about twelve minutes. Put them on a plate and open them at the table.

Serve with ciabatta bread.

Tip If the fish is grilled, pierce the lower side of the aluminum foil with a pointed kitchen knife so that the aroma of the charcoal can penetrate the fish.
