Instructions:

For the currant cake, first prepare the crumble. To do this, roughly mix the butter, vanilla sugar and flour together and grate into coarse crumbs.

For the cake batter, cream butter, sugar, vanilla sugar, lemon zest and salt, add eggs one at a time, stir in flour sifted with baking powder.

Spread the dough on a baking tray (30×40) lined with baking paper and cover with the currants. Sprinkle with the coarse crumbles.

Bake the currant cake in a preheated oven at 180 °C, top and bottom heat, in the middle for about 35 minutes until light brown.

Preparation Tip:

Sprinkle the currant cake with powdered sugar and serve with whipped cream.
