For the strudel dough, mix the ingredients together and knead with a food processor until a smooth dough is formed. Please make sure that the dough does not get too warm and therefore use cold water. Cover the dough and let it rest in the refrigerator for one night.

For the filling, scrape out the vanilla bean and separate the eggs. Cream the custard powder, butter, vanilla pulp and lemon zest with 50 g sugar and gradually add the yolks.

Whip the egg whites with the other 50 g sugar and a pinch of salt until stiff. Whip the cream until stiff. Add the goat’s cream cheese to the butter mixture. Fold in the snow, whipped cream and raisins.

Roll out the strudel dough then place it on a large kitchen towel and carefully stretch it out as thinly as possible from the center. Brush the edges with beaten egg and brush the filling. Spread the apples evenly on top. Leave a margin of a good two centimeters free. Next, roll up the dough with a cloth and spread it thinly with butter, pressing the edges well together so that nothing escapes from the strudel during baking.

Bake at 200 degrees for about 45 minutes at top and bottom heat, after 20 minutes brush again lightly with butter. The strudel is ready when it has taken on a beautiful golden yellow color.
