For the curd poppy seed cake, preheat the oven to 160 °C. Heat the milk. Add the poppy seeds and the lemon zest and let it swell for about 10 minutes.

In the meantime, separate the eggs. Mix the yolks with the sugar and the vanilla bean until it reaches a creamy consistency. Then stir in the curd cheese and the vanilla pudding powder.

Beat the egg whites until stiff peaks form and gently fold into the egg and curd mixture (note: folding is not just “stirring it in”, but careful stirring. The mass should become “more”, airier. The best way to do this is with a whisk or a wooden spoon with a hole in it).

Mix about five tablespoons of this mass with the poppy seeds. Pour the entire mixture (without the poppy seeds) into a greased mold. Spread the poppy seed mixture on top.

Bake in the preheated oven for about 45 minutes. (Test with chopsticks!)

Preparation Tip:

If you like, you can make beautiful patterns in the poppy seed mixture with a fork before baking. So the curd poppy seed cake looks especially nice.
