Heat a little oil in a small frying pan and fry the sausage for 1 minute, add the tomatoes and herbs. Beat eggs in a small baking bowl, stir in chili, salt and pepper and add to sausage in frying pan. Stir evenly in skillet with a fork. Sprinkle scallions on top and toast a nice omelet. Add to this a ruccola salad dressed with olive oil and you’ll want for nothing the rest of the evening.
Our tip: As an alternative to fresh herbs, you can also use frozen ones – they also stand out for their fresh taste!
