For the chocolate mousse, first melt the chocolate in a water bath. Whip the yolks and 2 tablespoons of powdered sugar with a mixer fitted with a whisk until a light yellow cream is formed. Fold the melted chocolate evenly into the cream using a whisk.

Whip the egg whites until very stiff, fold in the remaining powdered sugar and fold into the chocolate cream. Whip the cream until stiff and also fold into the cream. Chill the chocolate mousse for about 3 hours.

Preparation Tip:

Decorate chocolate mousse with grated chocolate and whipped cream.
