1. bring water to boil. Add long grain rice and salt. Cook for about 20 minutes until grainy.

Squeeze a grapefruit and pour the juice into a pan. Stir in 1 tsp sugar and the corn powder. Add the stock cube and bring to a boil. Season the chicken breasts with salt and pepper. Place in the juice and poach for about 8 minutes with the lid closed below the boiling point.

Season the sauce with salt, pepper and the remaining sugar to taste. Remove the peel from the second grapefruit and fillet the slices. The grapefruit slices in the sauce just warm.

Drain the long grain rice and drain well. Pluck the lemon balm leaves by hand and mix into the long-grain rice. Arrange everything on warmed plates

Tastes dry because very little sauce! The sauce can be stretched with unsweetened grapefruit juice (adjust cornflour).

Sherry is also interesting. The grapefruits must be filleted beforehand (timing!).

Make sauce in small pan and thicken slightly (10-15 min). Fry chicken breasts briefly and pour sauce over them (add more juice if necessary). Chicken about 5 min. in it and then bring to table.
