Instructions:

For the brittle, caramelize the sugar. Add cashews and roast briefly. Cool on parchment paper. Fold the parchment paper over the brittle so that the edges are closed. Work with rolling pin until brittle is coarse. For the relish, chop the peppermint and mix with the remaining ingredients. Steep for at least 30 minutes.

In the meantime, peel and quarter the pineapple, perhaps removing the stem. Cut each lengthwise into 4 wedges. Squeeze oranges. Caramelize butter and sugar. Extinguish with orange juice and cook until sauce thickens. Turn pineapple wedges in it to the other side.

Arrange pineapple wedges, pour sauce over them and sprinkle with brittle. Dust with powdered sugar. Serve the relish separately.
