For caramelized pineapple, peel the pineapple, remove the stalk and cut into pieces. Melt brown sugar in a pan, add pineapple pieces and orange sugar, pour in coconut rum.

Simmer over low heat until the caramel has dissolved.

Preparation Tip:

Caramelized pineapple goes well with pot dumplings, mousse, ice cream, pancakes and much more. Best still sprinkle with coconut flakes or pistachios.
