Preheat stove to 200 degrees.

Peel the pumpkin, remove the seeds and cut into rough cubes. Mix butternut squash with the other ingredients (except for Parmesan) thoroughly in a baking bowl. Form into a baking dish, sprinkle evenly with the Parmesan.

Bake for about 1 hour on the middle rack until the top is golden brown.

Notes: peeling the squash is not absolutely necessary, make gratin in further shallow if possible so all the squash pieces can roast, can use more Parmesan (Grana Padano) and strong seasoning. Nice addition, tastes potato-like.
