Clean and rinse Brussels sprouts and score the stalks crosswise.

Cook in salted water with closed lid for 15 minutes. Cut the sausage into strips. Drain and collect the Brussels sprouts water. Melt light butter and sweat the flour in it. Deglaze with Brussels sprouts broth and milk.

Simmer gently for 5 minutes at low temperature. Remove the sauce from the plate. Mix eggs and stir into the sauce. Season to taste with the spices. Form Brussels sprouts and sausage slices in a greased gratin dish. Spread sauce evenly over top. Sprinkle the grated cheese on top of the casserole.

Bake in heated oven at 200 °C for 20 minutes. Before serving, sprinkle with chopped parsley. Serve with boiled, peeled potatoes.
