For the banana jam, squeeze the lemons and grate the zest from one lemon. Peel the bananas and cut them into slices.

Mix sugar with lemon juice and zest, stir in bananas and let sit for 30 minutes. Heat the mixture and simmer, stirring, for about 10 minutes.

Pour the still hot banana jam into hot rinsed jam jars, close airtight and let cool upside down.
