Susanna Tea: This dish comes from the wooded island of Spetses, one of the four Saronic Islands located south of Athens. You can use different types of fish for it. Fish steaks or ~filets are baked in paradeis sauce with a golden crust.

For the sauce: heat the oil in a frying pan, add the onions and garlic and sauté for five minutes until translucent. Add wine, tomatoes with their juice, sugar and parsley, season with salt and freshly ground pepper. Bring to a boil, then simmer on low heat for thirty minutes until the sauce thickens. If necessary, increase the temperature to reduce the liquid.

Preheat the stove to 170 degrees.

Meanwhile, place the fish in a greased gratin dish. Drizzle with juice of one lemon and sprinkle with salt and pepper.

Once the tomato sauce has thickened, pour the hot sauce over the fish. Steam in the oven for ten to fifteen minutes, depending on the size of the fish.

Increase the oven temperature to 220 degrees.

Sprinkle the breadcrumbs over the fish and bake for another fifteen min until the crust is lightly golden brown and crispy.

Sprinkle with parsley and bring to the table hot.
