For the Prosciutto Rolls with Poached Egg, cut the rolls in half and toast briefly.

For the poached egg, bring water and vinegar to a boil. Place eggs in a cup and carefully slide into the water (be careful not to let the water bubble!).

Pour egg whites over yolks and leave in water for about 3 minutes. Carefully lift out with a kitchen aid.

Dress the rolls with a little olive oil and garlic. Place prosciutto and arugula on top of the roll. Finally, place the egg on top and sprinkle Prosciutto Weckerl with poached egg with cheese.
