For the spaghetti with jackfruit sugo, first peel and very finely dice the onion and garlic. Peel and grate the carrots, cut the dried tomatoes into small pieces. Strain the jackfruit and dice it as well. Sauté the onion and garlic in the oil from the sun-dried tomatoes until translucent.
