Cook the asparagus tips in plenty of salted water for 3-5 minutes, depending on thickness, until al dente. Lift out, briefly rinse and drain well. Then alternate 1 bacon slice with 3 white and 2 green asparagus tips and stick them on a long wooden skewer. Melt butter, brush the asparagus spears with it and fry on the grill or in a grill pan on both sides for about 6 minutes. Season with salt and pepper. For the sabayon, whisk egg yolks and white wine in a bowl. Whisk over a hot water bath until creamy, remove from the water bath and gradually stir in the softened butter. Season to taste with salt, cayenne pepper and lemon juice. Serve finished skewers with the sabayon.
