Rinse and dry the fish. Mix the cilantro well with the garlic, lemon or lime zest, and salt and pepper to season. Use a spoon to fill the fish’s body cavities full.

Brush the fish with a tiny bit of oil, season well and place each fish on a double layer of aluminum foil or parchment paper and wrap so that no moisture or flavor can escape.

As an alternative, banana leaves are a good option.

Place on a baking sheet in a preheated oven and bake for about 25 minutes, until the meat comes away easily.

In the meantime, melt the butter in a small saucepan. Add the ginger and stir well.

Mix in the light soy sauce.

Unfold the fish parcels, drizzle the ginger butter over the fish, garnish with cilantro and lemon or lime wedges, and bring to the table.
