Stir egg, crème fraîche, Parmesan and chopped parsley and season heartily with nutmeg, cayenne pepper and pepper.

Brush dough with it and top with ham.

Loosely roll up the two long sides toward the center.

Cut roll into 1 cm wide slices, unfold slices a little. Place on a baking sheet with parchment paper and bake at 220 °C in the oven for 10 min.
