Instructions:

Make a compote of rhubarb, sugar and water and thicken with a tiny bit of cornstarch. Whip the egg whites to a firm snow, add vanilla sugar when half firm. Fold the snow into the still hot rhubarb compote, portion and serve garnished with lemon balm.

Goes well with: Vanilla ice cream
