Instructions:

For the beauty summer rolls, first wash the vegetables and cut them into long thin strips. Cut the pineapple and avocado into slices. Wash the spinach and shake dry. Wash the lemon balm, shake dry and pluck off the leaves.

Soak the rice paper sheets in a large bowl of water for about 1 minute. Spread the rice paper out on a work surface. Place the vegetable strips, pineapple, lemon balm, and spinach on the bottom of the rice paper sheets and fold over the sides. Roll up tightly and place on a plate.
