Instructions:

For the warm chocolate cake with cardamom plums, first grease the small ramekins (or melange cups) with melted butter. Add cocoa powder and spread all over. Remove the rest by tapping.

Cut chocolate into small pieces and melt over water bath. Add butter, stirring until smooth.

Let cool briefly.

Beat eggs, yolks and sugar in a mixing bowl until foamy, slowly add the flour and finally stir in the chocolate mixture. Pour the mixture into the molds (¾ full) and chill in the refrigerator for at least 1 hour.

Bake in a preheated oven at 200 °C (top/bottom heat) for about 10-12 minutes.

Lightly caramelize sugar in a saucepan, deglaze with port and apple juice. Add the remaining ingredients and cook for 5 minutes.

Turn out of the molds and serve warm chocolate cake with cardamom plums.
