Remove the skin from the pineapple, cut into quarters lengthwise and remove the stalk. Cut papayas in half, remove seeds and peel. Cut pineapple and papaya into bite-sized pieces.

Cut avocado in half lengthwise, remove pit and peel, also cut off. Mix with hominy, pineapple, papaya and 2 tbsp juice of one lemon.

For the salad dressing, stir through the remaining juice of one lemon (2 tbsp.), olive oil and balsamic vinegar vinegar, season heartily with salt and cayenne pepper. Mix the citrus salad dressing into the lettuce.
