Instructions:

Rinse cooled beef and bones, place in a large saucepan and pour water.

Remove the skin from the onion, cut in half, add to the meat with bay spice, salt and peppercorns. Bring to a hearty boil once, skim off foam and simmer uncovered on low heat for about 2 hours. Clean the greens, rinse, coarsely chop and add to the clear soup after 1 hour.

For the dumplings: cream butter and stir in a little semolina. Fold in eggs – and gradually the remaining semolina. Season with salt and nutmeg and let rest for at least 20 minutes.

Clean the carrots and onions. Cut the green part of the onion into lozenges and the carrots into slices. Blanch both.

Cut out small portions of the semolina dough with 2 teaspoons and form elongated dumplings with both hands. Put the dumplings together with the vegetables into the slightly simmering clear soup and let them stand at low temperature for about 15 minutes. Bring to the table hot.
