Instructions:

Cut meat into strips and mix with soy sauce. Marinate for approx. thirty minutes with the lid closed.

Remove stalk and thick ribs from cabbage and cut into strips about 1 cm wide. Put into boiling salted water and cook for about five minutes. Drain well.

Remove the seeds from the chili peppers and cut them into strips. Chop shallots and garlic.

Heat the peanut oil in a wok or possibly in a large frying pan. Sauté peanuts and meat, turning, then remove. Add in the shallots, garlic and chili, sauté briefly, season with lime zest, coriander powder, salt and pepper and add the shrimp paste. Add the meat, nuts and cabbage. Season with soy sauce and garnish with coriander greens.

Perfumed rice, cooked without salt, goes best with this.
