Squeeze the garlic and put it in a suitable bowl, add the egg yolks and mix with an electric whisk and then, with the machine running, add the olive oil drop by drop until the mixture becomes mayonnaise-like. Then add the cayenne pepper (be careful!) and salt and fold in. Add a few saffron threads to taste. Serve on toasted fresh bread.
