Prepare a yeast dough for the homemade pita pancakes:

To do this, sift the flour into a bowl, crumble in the yeast, sprinkle with a pinch of sugar and knead with 1/8 lt. of lukewarm water, the soft butter and the salt. If necessary, add water or flour and knead until the dough is smooth and comes away from the bowl.

Brush the surface of the dough with oil and let it rest in a warm place, covered with a tea towel. It should reach about twice its volume.

Then knead the dough well on a lightly floured work surface and shape it into 8 balls.

Cover again with the tea towel and let rest for about a quarter of an hour.

Preheat the oven to 230 °C and line a baking tray with baking paper.

Shape the balls into circles with a pasta walker. Do not work the dough too much anymore.

Place the patties one by one on the preheated baking sheet and bake for 5 minutes on each side, until lightly browned.

The homemade pita patties are best served while still hot.
