For onion tartelettes, cut onion into fine rings, separate bacon from rind and dice finely.

Mix eggs with flour, salt and pepper until well blended.

Roll out puff pastry thinly on a floured work surface, line six mini tart pans with it and let rest for half an hour.

Heat butter in a frying pan, add bacon and onion and saute until liquid has almost completely evaporated (turn on low flame – onion should not brown!), let cool and mix well with egg mixture.

Loosen the mixture with milk (as needed) and whipped cream and pour into the prepared ramekins.

Bake the onion tartelettes in the preheated oven at 190 degrees convection oven for 25 minutes until golden brown.

The crispy-spicy onion tartelettes are served as a side dish to various meat dishes. They can also be served as a snack.
