Heat the syrup, sugar and fat in a saucepan while stirring until the sugar has dissolved, cool, stir the gingerbread spice mixture into the honey mixture, mix the flour and baking powder in a baking bowl and press a bulge in the center, mold the syrup into the bulge and knead the whole thing together from the center with the dough hooks of the mixer to form a dough.

Preheat the oven to 180°C, convection oven to 160°C, gas mark 3, roll out the dough thinly on a floured surface, cut out reindeer or other figures and place them in batches on a baking tray lined with parchment paper.

Bake figures for six to eight minutes, cool on a cooling rack, stir egg whites and powdered sugar with the whisks of a mixer to form a thick glaze.

Fold a small paper bag or possibly fill the icing into a small freezer bag, cut only a very small corner small at the top and finely paint the contours of the reindeer with icing, dry.

Tip: Possibly cut out small holes for hanging.
