For the baked Augsburgs, peel the skin off the sausages and cut each sausage in half lengthwise.

Place flour, eggs, and bread crumbs in a plate each for breading. Beat eggs a little. Now turn each Augsburger half first in flour, pull it through the egg and finally roll it in the breadcrumbs.

Heat plenty of oil and/or clarified butter in a large frying pan. Put in Augsburger and fry over medium heat until crispy all over. Lift out, drain on paper towels and spread.

The baked Augsburgs are served with cucumber or tomato salad, potato salad, mayonnaise salad or parsley potatoes.

Preparation Tip:

For a hearty meal, replace two of the baked Augsburgs with 4 small portions of whole Emmentaler and bread them the same way.
