Clean spinach properly, removing the hard stems. Rinse spinach two or three times and drain well. Finely dice shallots. Chop garlic finely. Melt butter in a large saucepan. Saute shallots and garlic in it over medium heat for 2 min until soft.
Add spinach and cook on low heat with lid closed for 3 – 4 min, stirring frequently. Add whipping cream and make another 1-2 min, seasoning with salt, pepper and nutmeg. Grind spinach with a chopping stick and bring to the table on the spot.
