Mix beefsteak mince with Worcestershire sauce, pepper, salt and cognac. Season well. Shape into beefsteak. Arrange on a wooden board. Garnish with:
Diced egg yolks, bell peppers, scarole (in shell), anchovies, olives. Cornichons and pearl onions.
These ingredients can be mixed with the meat as you like.
