Instructions:

For the yeast bread with potatoes, wash the potatoes the day before and steam until soft.

Mix half of the flour with half of the lukewarm water and the yeast with the dough hook of the food processor to a smooth dough. Let dough rest until doubled in volume.

Add the remaining water and flour.

Peel the potatoes, grate and add to the dough, as well as flax seeds, sunflower and pumpkin seeds. Let dough rise for 10 to 15 min.

Grease the molds with butter and sprinkle with whole wheat flour, sprinkle the bottom of the molds with sesame seeds.

Pour the dough into the molds, smooth it out and score the surface 3 times diagonally with a kitchen knife.

Place the loaves in the cold oven, then bake at 220° Celsius for 45 minutes.

Remove the loaves from the molds and bake for another 25 minutes. During baking, brush the crust of the yeast bread with potatoes twice with water.
