For the dandelion honey, wash dandelion heads and drain thoroughly. Alternate dandelion heads and sugar in a large jar, close and place in a sunny place.
Let stand for about 4-5 weeks (turn again and again). The sugar must liquefy. Empty dandelion mixture into a large pot.
Squeeze the lemons and add them. Melt over very gentle heat, then pour through a hair sieve and pour the dandelion honey into clean twist-off jars.
