For the sausage in a jar, put the pork shoulder and belly through a meat grinder. Weigh and mix salt, pickling salt, pepper, nutmeg, glutamate and marjoram.
Season the meat mixture with the homemade spice mixture and mix with your hands for at least 5 minutes. Fill into clean canning jars or permanent cans and cook for about 2 hours. Afterwards, toss a few times in cold water.
Label the finished sausage in the jar and eat it yourself or give it away nicely packaged.
